Let's be honest, finding new, easy, and delicious ideas for lunchboxes can be a struggle. My husband and I also love knowing exactly what goes into our kids snacks, so we find it better to make them ourselves! Better yet, the kids can join in too!


This slice is great as it is super simple, easily adaptable to your child's tastes, and better yet, nut free!





Cornflakes Slice


You'll need:

1 x 8 inch (20cm) square tin, lined

1 x large mixing bowl

Wooden spoon

Cup measurements


Ingredients:

1/2 cup cornflakes (or other preferred cereal)

1/2 cup oats

1/2 cup sultanas (or other preferred dried fruit)

1 cup chocolate chips (I used milk chocolate, but you could use either dark or white if preferred. You could also swap out for seeds)

197g condensed milk (half a tin)

1tbs plain flour (if necessary)


Method:

Preheat your oven to 180°C no fan, or 160°C fan forced. Line your tin with baking paper.

Add all of the dry ingredients into a bowl.


Add the condensed milk into the dry ingredients and stir to combine well and fully incorporate the condensed milk through the dry ingredients. If you find that with your choices of mix-ins it is still very wet, add in a tablespoon of plain flour and stir.


Press the mixture evenly into the tin and bake the slice in the preheated oven for approximately 15 minutes, until set and lightly golden.


Leave it to cool completely as it will break apart if you try to remove it from the tin while still hot. Once it has cooled, turn it out onto a rack and flip over, or if it is cool and firm enough, lift it out of the tin with the baking paper (checking that it isn't going to break as you lift).


You may find that leaving it in the fridge for a little while before slicing makes it easier to get a clean cut. Once it has been sliced, if you wanted to add an extra chocolate hit, you could melt some milk or dark chocolate and drizzle it on top.


I prefer to keep my slices in the fridge in an airtight container, but you can also keep it at room temperature in a sealed container, if preferred, in a cool space away from direct sunlight. This only lasts about 5 days in my household, as I suspect it may in yours!
